Thai cuisine is known (and loved) for its iconic, piercing spice. I was introduced to spicy foods from the time that I was a baby, and to cool down in between bites, I wouldn’t reach for milk or water; instead, I took in a forkful of crisp cucumber salad. Its cool, refreshing crunch was the perfect contrast to every spicy bite and is something that I often keep a bowl of in the fridge to eat as a side or snack.
